The Red Bull's father has been cursed into the minotaur of the Labyrinth known as Ludo while his sister is Eilonwy of the Black Cauldron.
He encountered Amalthea once in the past and betrayed his Bull form. This can be plotted and/or threaded, it is simply an event that must have occurred in the past canonically.
